Created by Executive Chef Justin Hammond, the festive seafood platter consists of an assortment of freshly prepared hot and cold treats including house-made sauces and dips. Feast on the succulent Red Carabinero Spanish Prawns, tangy Scallop Ceviche with herb oil and jalapeno, Freshly Shucked Oysters, served with limoncello sorbet, and more.
The Summerlong Festive Menu costs SGD99++ serving two people, including a seasonally delicious Egg nog semifreddo, with hazelnut praline, and smoked cherries for dessert.

3) Neon Pigeon
Tis the season to be jolly! Modern Izakaya-style restaurant Neon Pigeon presents their Festive Menu (SGD99++) this Christmas season.
The Pan Roasted Loin of Venison is served with sweet potato, red cabbage, mataike crumble and a shitake teriyaki sauce. Inspired by Chef de Cuisine Dennis Smit’s memories of cold winters during Christmas back home in The Netherlands, this dish delivers a tingling festive joy with a unique Japanese influence. The red cabbage and sweet potato cream add freshness, while the assortment of beautiful mushrooms from Japan, including shimeji, eryngii, maitake and shitake, prepared in a variety of textures, offers an additional depth of enjoyment. The hearty dish is carefully finished with land seaweed for a touch of saltiness and color.
For absolute indulgence, the dessert, Pate a choux, is sure to hit all the right notes. Crunchy choux pastry is filled with a boozy chocolate-chestnut buttercreme, before being served with a side of matcha parfait and a tangy cranberry compote that brings the dish together. For additional crunch, the dessert is topped off with a buckwheat crumble.

Treat yourself to divine dinner delights such as myrrh-smoked grey mullet mosaic carpaccio, plum and flower crab mille-feuille, and a cherry-tinted baked venison; or spend Christmas morning with the family and tuck into a festive brunch by the farm, featuring hearty offerings such as roast turkey carving, roasted chestnut soup, and eggnog french toast.

Chef Damian presents his beloved heritage Eurasian Christmas recipes exclusively at Folklore. The Christmas menu features eight classic dishes of every Eurasian Christmas table; available for dine-in and takeaway.
A festive staple on Chef Damian’s Christmas table and his star favourite, Feng (SGD30++) evokes warm memories of young Damian helping and spending quality time with his grandfather in the kitchen. Taking as long as three days to prepare, the spices are carefully picked, air-dried and ground, and 20 kilograms of assorted pig’s offal are meticulously cleaned and diced.
Another standout dish is the Oxtail Semur (SGD26++), a traditional dark stew that traces its roots back to Indonesia. To prepare this dish, Chef Damian would insist on sourcing the fleshiest oxtail and cooking it for over 5 hours; simmering the oxtail with an aromatic mix of spices such as nutmeg, cinnamon, cloves, star anise, a large portion of shallots and Bombay onions, and finally rounding up with rice vinegar to bind all the flavours together. The result – a succulent meat dish with deep and pronounced flavours.
A festive meal will not be complete without desserts. Look forward to Sugee Cake (SGD10++), an Eurasian favourite that teases with its buttery rich, moist yet light and nutty crumb of almond meal.
Not to be missed is the rare heritage kueh – Putugal (SGD8++), a treat even Chef Damian himself has not made for the last 15 years. Deeply ripened Raja bananas are placed between layers of hand-grated tapioca – the layers themselves defined by colouring half of the tapioca with blue-pea flower. Once steamed, the putugal is sliced and coated with freshly grated coconut. The natural essence of banana lends a subtle floral note and a pleasant, light sourness.

For the mains, the “Holly” Seafood Fettucine is inspired by the season’s colours and features orange and green noodles of housemade fettucine, intertwined with grilled Spanish octopus, Scottish mussels, prawns and seared scallops in a white wine sauce.
A generous portion of the Twice-Cooked Christmas Turkey Roulade is the piece de resistance of the menu. Sous vide and shallow-fried turkey meat is generously stuffed with a braised chestnuts and mixed mushrooms duxelle, complemented by a spicy satay peanut butter sauce.
