BAM! Goes Full Omakase

After four and a half years of delighting diners with exquisite culinary creations from it’s a la carte menu, Singapore’s first modern shudo restaurant, BAM!, has taken the leap and revamped to a full-fledged, omakase-only concept.

Following its recent expansion in November 2016 from an intimate sake-tapas bar to a fully fitted restaurant spanning three shop house units on Tras Street, executive chef Pepe Moncayo now writes the next chapter of BAM! by focusing on its well- loved omakase, which has gained a reputation through the years for its affordability and sake pairing dexterity.

Omakase (お任せ in Japanese), meaning ‘I entrust to you’, is an ever-evolving dining experience that consists of dishes selected and coursed entirely by the chef. At BAM!, guests are taken through a gastronomic journey of chef Pepe’s life experiences, each meal designed to be unreservedly different from the next.

“By focusing on our omakase offering, we are able to put our best efforts behind a single free-form menu that showcases the season’s peak ingredients at their freshest, without being bound by any pre-conceived notions of cuisine style or signature dishes,” explains chef Pepe.

In lieu of the former a la carte selection is now an Omakase Menu (starting from SGD98++ for four courses) that is available in four-course, six-course, and eight- course tiers. A Vegetarian Omakase (starting from SGD78++ for four courses) is also available as a meatless alternative to chef Pepe’s culinary ingenuity.

For the post-dinner hankerings, BAM! offers a Dessert Omakase (SGD48++ for three courses), featuring a toothsome selection of desserts and petit fours—all made in- house by BAM!’s dedicated patissiers to give each meal the sweet ending it deserves.

In the true spirit of ‘modern shudo’—a contemporary way of sake appreciation through food—the omakase menus all come with the option of sake pairing led by certified sake sommeliers, effectively adding a divine dimension to the BAM! experience by bringing out the umami flavours of chef Pepe’s cuisine.

Every meal at BAM! is now a revelation in itself, surprising even the most fervent of foodies as chef Pepe continues to find new ways to transform the freshest seasonal ingredients—through innovative permutations of flavours and textures—into one-of-a- kind indulgences, paired with exceptional sakes from the cellar.
