Lunch Set Menu
Whet appetites with the lunch set menu, starting with a choice of three starters of Heirloom Tomatoes, a mélange of vine-ripened tomatoes, Spanish smoked anchovies and housemade preserved lemon, sprinkled with black olive soil and a drizzle of Arbequina
olive oil; Smoked Farm Egg featuring a sous vide egg smoked in an Inka grill oven, celeriac foam, black trumpets and succulent pieces of Ibérico pork jowl; or Hokkaido Scallops Carpaccio, highlighting delicate thin slivers of raw, sustainable hand-dived scallops – lightly torched for an added smokey flavour, garnished with ricotta, fresh raspberries, Jerusalem artichoke purée and chips, finished with a squeeze of sprightly lemon juice.
Choices from the mains include Pasta All’uovo, an interlace of flat, thin ribbons of tagliatelle pasta and tender cuttlefish, topped with a smoked egg yolk to be enveloped together with Idiazabel cheese and squid ink sauce; Glazed Beef Cheek –braised beef
and grilled lettuce takes centre stage in this dish, accompanied by buttery smoked ratte potato purée and pickled radishes; or Smoked Ibérico Pork Belly complemented by julienned carrots presented as noodles and a carrot ginger purée, drizzled over with a pork, honey and sherry vinegar jus. End off the meal with a gratifying dessert – the refreshing Botanist, an interpretation of
the classic Gin & Tonic, highlighting a quenelle of cucumber sorbet, Granny Smith apple cubes compressed with gin and juniper berries, coconut foam and keffir lime zest; or Ceiba, a rich and intense, warm organic dark chocolate soup paired with dehydrated
brownie croutons, compressed hibiscus flowers and a piquant ginger ice-cream.
Executive Lunch Set Menu
For an easy, breezy meal, opt for the 3-course executive lunch set menu that offers a choice of starters like Crispy Baby Squid Salad with heirloom tomatoes and mesclun salad, tossed in a piquant squid ink vinaigrette; or the wholesome Roasted Pumpkin Cream elevated with caramelised goat cheese, toasted pumpkin seeds, mixed mushrooms and fresh basil.
The mains selection includes Grilled Marinated Chicken resting on a bed of couscous, brown dates, roasted nuts and heirloom carrots; or an aromatic Mellow Rice enriched with a flavoursome prawn bisque, topped with inka-grilled prawns, green asparagus and pine nuts. Leave space for an indulgent Organic Chocolate Brownie served with toasted hazelnuts, chocolate sauce and coconut ice cream.
Sunday Brunch Set & A La Carte Menus
On Sundays, kick back and relax, while partaking in the tradition of a leisurely brunch with set or a la carte menus at Botanico. The 4-course brunch set menu comprises of a serving of freshly shucked oyster, Ibérico ham croquette and lamb tartare, followed by a choice of starters, mains and desserts. Options for starters include the Grilled Sucrine Lettuce paired with creamy Stracciatella buffalo cheese, Spanish smoked anchovies, housemade preserved lemon and capers; the savoury Smoked Farm Egg
with celeriac foam, black trumpets pork jowl; or Pasta All’uovo featuring tagliatelle pasta and tender cuttlefish, accompanied by a smoked egg yolk, Idiazabel cheese and squid ink sauce. Choose from a hearty selection of mains like the Spanish Mackerel, complemented by charred brussel sprouts, grilled kumquats and black garlic sauce; Glazed Lamb Shoulder, served with char-grilled eggplant, semi-dried tomatoes, thin slivers of cucumber and red mustard, drizzled with lamb jus; or Chargrilled
Wagyu Flank accompanied by burnt onions, ratte potatoes and romseco sauce.

Inka grill served with a saffron-infused bomba rice topped with pork crackling; and Tropical Fruits, a dessert featuring laksa leaf ice cream, fresh palm fruit, jackfruit, longan, shards of meringue, white chocolate turmeric ganache, deep-fried laksa leaves and sable crumble.
Complete the feasting with an enticing array of refreshing cocktails, encapsulating botanical and tropical ingredients. Sip on signature cocktails like the Garage Gin’onic, Thyme Lemonade and Blackberry Lychee Mojito, concocted with fresh ingredients, herbs and juices as well as simple syrups infused in-house with elderflower, thyme and mint.
