Celebrate this joyous and exuberant Spring Festival with Monti’s modern take on Lunar New Year feasting curated for the auspicious occasion; featuring a delightful Lunar New Year favourite – Yu Sheng, with king salmon carpaccio and salmon roe, topped with pomelo, mango, orange, sake, yuzu, and mangosteen caviar. Toss with auspicious wishes with an additional choice of tiger jade abalone and beckon a promising start to the new year.

Commemorate February, the month of love, and celebrate the occasion with your loved one by indulging in Monti’s Valentine’s Day menu. Begin your 6-course dinner with Amuse Bouche of baccalà served with beetroot crisp and Kaluga Queen caviar.
Nettle Lobster & Potato Raviolo
Continue on the epicurean journey of love with Monti’s signature Hokkaido Scallop & King Salmon Tartare served with rose and passion fruit pearl, and Taggiasca olive sable; Sous Vide Free-range Egg served with crispy Hotaru squid, almond bread crumble, sherry caramel, and seasonal fresh truffle; and Nettle Lobster & Potato Raviolo served with clams, cherry tomato, dill, and lobster foam.
Slow Cooked King Fish
Arouse your palate with a choice of Slow Cooked King Fish accompanied with oyster and cucumber espuma, and roasted chervil puree, or opt for something from the land, Charcoal Grilled Full Blood Mayura Tri Tip accompanied with purple potato puree, and parsley sponge.
